Tasting Notes
Made from pinot noir and chardonnay, this is quite a full-bodied sparkling wine with more concentrated flavours than you usually find in sparkling wines. The aim in most sparkling wines seems to be to find a position on the lighter end of flavour intensity that complements the crisp texture and bubbles. It's not that the bigger body and concentration of Violette doesn't work, but it's a different style that certainly tilts it away from sipping on its own (though you can do that) toward weightier food.
