The ancient Pecorino grape was thought to be extinct, having lost out to newcomers such as Trebbiano, but in the 1980s it was literally rediscovered by Guido Cocci Grifoni. Grifoni was researching native grapes, in particular heritage grapes that were at risk of being lost to modernity. The story goes that he heard of a tiny vineyard in Marche belonging to an 80-year-old man named Cafani. Grifoni visited the site in 1980 and took some cuttings with him for study. The end result is, well, in part, this wine. You can expect notes of apple, lemon and pear, with a refined mineral undertone. Try this with grilled pork chops garnished with lemon and herbs, or with your favourite fish dish.
